Amazing is the only word to use when describing the famous restaurant Central! This is the concept of elevations executed by Virgilio Martínez Véliz, the former sous chef of Copenhagen’s critically Acclaimed Noma and understudy of the Lima restaurant magnate Gaston Acurio. The restaurant is currently rated the best in all of latin America, sixth in the world, and you can easily see why from the pictures alone! We went for Thanksgiving and tried the 16 course menu with a wine pairing it was as follows;
The food tastes as amazing as it looks and truly represents the whole of Peru with all of its offerings at each elevation demonstrating all of the country’s rich culinary bounties on offering throughout the many diverse ecosystems. Inks, dyes, and all things edible are presented in an endlessly exciting Peruvian feast of exotic colors and flavors that continually impress and inspire. Elevation as a menu is a genius concept executed perfectly here at Central. The menu works so well in expressing the culture from the Andes mountains to the pacific coastline where the dishes range in flavors, colors and techniques of the country and then elevated here highlighting the skills of Virgilio and his team. True perfection!
